But I happen to like Morningstar vegetarian sausage and only that. As a life-long vegetarian I grew up with that as my pancakes side. I don't like the other brands and I don't eat meat.

But they're a type so I felt I should be allowed to cast a vote. Just, you know, obligated. ;-)

They DO go well with maple syrup, (so does ham).
Sauerkraut is not a sausage, it is shredded pickled cabbage that is often served WITH sausage (or pork).
In Vienna street vendors sell little cheesy sausages on sticks that are really very tasty, especially when you are drunk on good austrian/german/czech beer.
I live in Cleveland which is probably as close to sausage mecca that you can get in the U.S.
My favorites include Andouille, Smoked Keilbasa, Chorizo (Txorizo), Cured Chorizo, and chopped Bob Evans link breakfast (pork) sausage. Also smokies.
